I think if it makes your pee turn red, it's probably too much. At least if your British beetroot is red like the USian variety.

It depemds on the size of the beets, mostly: for the nice little ones [personal profile] adrian_turtle served me the other day, five was a good number and I could have eaten more. But I wouldn't want two kilos of beetroot at one sitting.

You are welcome to my share of the pickled beets, but I can go through large quantities of roasted beetroot, whole or cut up.

How are they cooked?

The only way I really like beetroot is in a pancake like unto a potato pancake, and that way I'll eat 2-3 at a sitting. If they are roasted, I'll eat one. Otherwise, I'll probably pass.

The variety, growing conditions, and size matter. So does the way they are cooked. Very good roasted beetroot, especially baby ones, I will eat like candy, and I have been known to snack on raw baby beets from a local farmer. Most pickled beets I will not even touch...slimy yuck. So I want ALL THE BEETROOT, but only if it is GOOD beetroot.

*crunches thoughtfully* They aren't as sweet as the cooked ones, actually. More like on the level of a raw carrot vs a cooked carrot. But they are quite tasty. They have a fresh flavor to them. If you like crunchy things and are okay with roots, and you can get these super fresh and - basically you should be able to *snap* off the trailing root instead of yanking at it - then definitely give them a try. Scrub them lots, though, or peel them I guess.

Here's a picture of some different varieties sliced raw, though they are larger than the "baby" stage, which should be about like a USA grocery chicken egg in size. I like the candystripe variety.

Roasted beetroot are harder going. Beetroot cooked, cooled, sliced, and soaked in vinegar = unlimited consumption for me.

Oh gosh. Roasted beetroot is like candy - delicious, deep-red candy. Roasted beets with a sweet glaze are even better, and look jewel-like and beautiful on the plate, to boot.

Pickled beetroot is amazing and goes with everything (or at least everything you don't mind getting turned red).

One of my personal rules is "you can eat all the vegetables you want," and if beetroot is involved, I will probably want quite a lot of vegetables.

This recipe is similar to what I do, though I haven't added the orange juice. I may have to try that!

...I need to thin the beets anyway.
