- What was the first type of cheese you ever ate?
I don't remember, but I'm guessing it was something fairly flavourless but fun to eat. Like string cheese. - What was the type of cheese you ate most recently?
Manchego. Wait, I tell a lie, I put some garlic & herb cream cheese on my sandwich at lunch. But I think of that as more of a spread than a proper cheese. - What is the most unusual cheese you ever ate?
Hm, I don't know. I've tried a lot of different cheeses. I think one of the most unusual (and enjoyable) cheese flavours is soft ash-coated goat's milk cheese.
One of the odder cheeses I've tried and liked is brunost or gjetost, which is a soft brown Norwegian whey cheese. It's extremely sweet for a cheese. - What is your favorite cheese?
Well, it depends on which country I'm in, as I'll generally eat whatever the local specialities are. I do like a good Cornish Yarg at Christmas. - What is your favorite dish made with cheese?
For comfort food, nothing beats mac and cheese. For pure decadence, baked camembert with garlic and a big pile of flatbreads or toast for gobbling up the lot. When I'm homesick, a cheese quesadilla.

Manchego. It is my parents’ local cheese. I need to get more into making vegan cheese again!
